Our Wood Fired Grill

At the heart of our kitchen stands a true original: the legendary grill by Charles Eisendrath – crafted from solid Illinois steel, with an open flame and manually operated height adjustment. This “Inferno” is no ordinary grill, but one of what the Wall Street Journal called the “next level machine” – already a cult favorite in top U.S. kitchens.

We fire it up with a blend of Quebracho Colorado charcoal and locally sourced beechwood. The result: intense roasted aromas and a texture you won’t want to miss once you’ve tasted our truly great meat.

Flannery Beef

Our cuts from Flannery Beef come from one of California’s most renowned meat producers. This family-run business is led by Bryan Flannery and his daughter Katie, who are driven by passion and an uncompromising commitment to quality.

The cattle – primarily slow-raised Holsteins – are personally selected, hand-cut, and dry-aged for up to 90 days. This meticulous aging process gives the meat its signature depth, intensity, and tenderness.

The marbling, especially in the rib-eye, is reminiscent of Japanese Wagyu – no surprise that wine critic Robert Parker once declared:

“If this meat were a wine, I’d give it 100 points.”

Miyazaki Wagyu

Direct from Miyazaki Prefecture on Japan’s southern island of Kyushu comes one of the world’s most exquisite Wagyu beef products. These cattle are raised for over 30 months in a stress-free environment and are bred and fed to the highest standards.

Only cattle graded A4 or A5 may carry the name Miyazaki Wagyu. Its marbling – the famous “snowflake pattern” – delivers a silky-soft texture and an exceptionally refined flavor.

Our A5 Wagyu with B.M.S. 8+ is so tender, it melts on the tongue. A true experience – rich in umami, elegance, and precision.

Their animals – Angus cattle, Turopolje pigs, and Pomeranian ducks – are raised in a natural, stress-free environment. What sets them apart: on-site pasture and farm slaughtering, with no transport – ensuring the highest meat quality and full ethical responsibility.

Sevelen Wagyu

The Wagyu cattle from Sevelen come from pure Japanese bloodlines – bred and raised in Switzerland on lush pastures, with great respect for both animals and nature.

Every cut is crafted by hand and comes from a farm where quality always comes before quantity.

Ueli-Hof Pork

At Ueli-Hof in Ebikon (LU), animal welfare and sustainability take center stage. The hardy pigs live outdoors on natural ground, with plenty of space to root and wallow – just as nature intended.

Slaughtering takes place directly on the farm – stress-free and without transport. Processing is done in the farm’s own organic butcher shop – with artisanal care and deep respect for the animal.
