A radical approach of the Zero-Waste movement is pursued by the Araab brothers in Zurich through their mushroom cultivation on coffee grounds from local gastronomy. The freshly harvested mushrooms, which grow on our coffee grounds among other things, are intense in flavor and have a meaty texture. The production aims for a 100% circular economy of all required resources.

Gebr. Meier AG

The Gebrüder Meier consistently rely on sustainable resource utilization. Their greenhouses are heated not only by the waste incineration’s residual heat, but also the carbon monoxide generated during the combustion is utilized to improve plant growth, which absorbs this gas. Furthermore, a photovoltaic system on the roof generates electricity for the processing and storage of vegetables. Through the regular use of beneficial insects, the use of pesticides is continuously reduced.

Jucker Farm

Jucker Farm, as the first energy-autonomous farm in Switzerland, we source seasonal products such as berries or asparagus from Rafzer Hof. The decision for this collaboration is based on several factors, including the high level of transparency that is part of Jucker Farm’s concept, as well as experimenting with pesticide-free farming. Other important criteria for us are the short delivery routes and the high quality of the products, which is why we have decided to collaborate with Rafzer Hof.

The biggest challenge in mushroom cultivation is creating the right conditions. In contrast to the forest, where there is a balance, double locks and laboratory-like conditions are required in cultivation to ensure hygienic conditions.
The abandonment of pesticides is associated with high risks, as we experienced in 2020 at Rafzer Hof. Crop failures can endanger both the profitability and the food security of the supply.
